Gooey Banana Cake

This cake is so easy to make and delicious!  Plus it's sugar free, and dairy free.


What's needed:

3 cups of oats (a mug size cup)

4 over ripe bananas ½ a cup of raisins

2 tablespoons of apple puree

2 tablespoons of coconut oil

3 teaspoons of cinnamon

3 teaspoons of vanilla powder

3 cups of love!

What to do … 

Preheat oven to 170 ° C. Mash the bananas in a bowl with a fork. Blitz the oats in a food processor until they become like rough powder. Add the oats to the bananas and mix together. Add the apple puree and raisins and mix together. Melt the coconut oil and add to the mixture along with the cinnamon and vanilla, mix it all together. Line a loaf tin with a baking sheet and pour the mixture in. 

Bake for approx. 50 minutes or until a fork comes out clean from the mixture if it's gently poked in! Then you know it's cooked in the middle. Take the cake out of the oven and let it stand in the tin for around 20 minutes and then take it out and cool on a baking rack. Take a note: apple sauce and coconut oil should not be omitted or replaced because they help to bind the dry ingredients.
