Wheat free courgetti (zucchini) pasta with basil and garlic sauce... a healthy and delicious alternative to pasta and sauce!
What's needed for Basil and Garlic Sauce:
- 1 tin of white beans
- juice from half a lemon
- a handful of basil
- 1 avocado
- pinch of salt
- 8 tbsp olive oil
- 2 garlic cloves
- 1 smile!
What to do:
Put all the ingredients into a food processor and blend until it forms a smooth paste.
What's needed for Basil and Garlic Sauce:
- 2 courgettes (zucchini)
- a handful of snow peas
- juice from half a lemon
- salt to taste
- olive oil
What to do:
Spiralize the courgettes if you have a spiralizer, if not, cut the courgettes into long thin strips. Add the courgetti to a hot pan with olive oil and salt; after 2 minutes, add the snow peas and cook gently until a little soft. Add the basil and garlic sauce and 100ml water, mix together and allow to gently simmer for a few minutes; to finish, squeeze in half a lemon.Serves 2 people!
