Wheat Free Courgetti Pasta

Wheat free courgetti (zucchini) pasta with basil and garlic sauce... a healthy and delicious alternative to pasta and sauce!

What's needed for Basil and Garlic Sauce:

  • 1 tin of white beans 
  • juice from half a lemon 
  • a handful of basil 
  • 1 avocado 
  • pinch of salt
  • 8 tbsp olive oil 
  • 2 garlic cloves 
  • 1 smile!

What to do:

Put all the ingredients into a food processor and blend until it forms a smooth paste.

What's needed for Basil and Garlic Sauce:

  • 2 courgettes (zucchini) 
  • a handful of snow peas
  • juice from half a lemon 
  • salt to taste
  • olive oil

What to do: 

Spiralize the courgettes if you have a spiralizer, if not, cut the courgettes into long thin strips.  Add the courgetti to a hot pan with olive oil and salt; after 2 minutes, add the snow peas and cook gently until a little soft. Add the basil and garlic sauce and 100ml water, mix together and allow to gently simmer for a few minutes; to finish, squeeze in half a lemon​.

Serves 2 people!
